Introduction

These muffins are absolutely delicious and extremely filling! These muffins are absolutely delicious and extremely filling!
Number of Servings: 12

Ingredients

    2 cups of rye flour (may also use buckwheat or spelt)
    1 cup of desiccated coconut
    1/2 cup coconut oil
    1/2 cup maple syrup
    2 eggs
    3 bananas
    1 cup of dates, soaked and chopped
    2 tsp baking powder
    1 tsp vanilla essence

Directions

Preheat oven to 160 degrees celcius
Blend the bananas, eggs, coconut oil, maple syrup and vanilla essence together.
Mix dry ingredients together and fold into wet ingredients. Stir through chopped dates and spoon into 12 case muffin tin.
I played around with cooking time but about 20-25 minutes should be enough.
