Ingredients

    Garlic

    Canola Oil

    Onions.

    Ground beef, extra lean
    Ground turkey, extra lean

    Salt
    Pepper
    Chili powder


    Lettuce (I used shredded iceberg for this recipe)
    Tomato (I used raw tomatoes for this recipe)
    Grated cheese (I used colby/monterrey jack shredded for this recipe)

    And lowfat sour cream, if desired. (not included in nutritional summary)

    Use either crispy (corn) tortillas or soft (flour) tortillas (I used taco shells for this recipe)

Tips

This recipe can be doubled (or tripled...) and then frozen and stored in small containers for future use.
Also, this is the main recipe for enchilada casserole.

Using 1/2 turkey and 1/2 beef cut really helped cut the calories!


Directions

Chop garlic.

Heat oil in skillet.

Brown onions in oil.

Add chopped garlic.

Add ground beef and ground turkey, stir til browned. DRAIN excess grease!

Add salt, pepper, chili powder.

Serve with

Lettuce
Tomato
Grated cheese

And lowfat sour cream, if desired.

Use either crispy (corn) tortillas or soft (flour) tortillas.
