Introduction

This is a delicious sugar free version of the no-bake chocolate peanut butter oatmeal cookies. This version uses half the amount of oatmeal with almost half ground flax seed and chia seed. Sweetened with natural Stevia powder from the bulk food section at the health food store. Ingredients

    1 stick butter
    1/2 Cup Goats milk (or regular milk)
    1/4 Cup water
    1/2 Cup Unsweetened Cocoa Powder
    1/2 Cup Powdered Stevia
    1/4 Teaspoon Salt

    1 Cup Natural Peanut Butter
    1 Teaspoon Vanilla Extract

    1 1/2 Cups Quick Oats
    1 1/4 Cups Ground Flax Seed
    1/4 Cup Ground Chia Seed

Tips

I am still experimenting with the recipe. I've also made it with Erythritol and Agave Nectar, and without oats and flax seed only. This recipe is the best tasting so far. It is a little drier than the regular no-bake cookies but just as tasty :) Hope you enjoy it.


Directions

In a medium sauce pan melt the stick of butter then add the 1/2 cup of milk and 1/4 cup of water. When its almost to a boil then add the 1/2 cup of unsweetened cocoa powder and the 1/2 cup of Stevia powder. Cook one minute, it may boil. Remove from heat. Add the 1 cup of peanut butter and the vanilla extract. Mix very well. I actually use a single attachment on my mixer. (If the natural peanut butter is separated you may want to mix it together first)

In a big bowl where you already have the oats, flax seed and chia seed ready, pour the hot mixture over and mix well.

Put by tablespoon on to wax paper. Should make about 44 tablespoon sized. Flatten with fingers or spoon. Put in refrigerator to firm. Keep refrigerated.

Serving Size: Makes 44 tablespoon-sized cookies
