Ingredients

*Rice, white, short-grain, cooked, unenriched, 2 cup - a little on the dry side
*Mango (1 medium raw), no skin or seeds, 207 gram(s) -grated
Turmeric, ground, 1 tsp
Ginger Root, 2 tsp- grated
*asafoetida (hing), 0.25 tsp
*peanut raw (100 grams = 1 serving), .1 serving
*chana dal, 0.06 cup
*chilli powder, 1 tsp
Salt, 1 tsp
*concentrate cooking tamarind, 1 oz
Mustard seed, yellow, 1 tsp
*Cumin seed, 1 tsp
*Green Chilli Pepper Fresh, 10 gram(s)
Ghee- 3tsp
Directions
Set aside the cooked rice and spread it in a plate to cool off and it should be a little dry and not too soft and mushy.
Heat ghee in a pan, add the turmeric, cumin seeds, mustard seeds, hing, chilli powder salt, ginger, green chilli, chana dal and peanuts and roast for a minute or two. Make sure not to burn them. Then add the grated mango and cook till it loses its raw smell. Add the tamarind concentrate or the tamarind extract and let it simmer for 2-3min. Then add this mixture to the rice and mix well. And serve with yogurt or with any sides.
