Number of Servings: 8

Ingredients

    Zucchini, sliced 1/2 cup
    Squash, summer, sliced 1/2 cup
    Onions, red, large diced 1/2 cup
    Mushrooms, sliced 1/2 cup
    Garlic, chopped 2 tsp.
    Olive oil, extra-virgin 1 Tbsp.
    Quinoa 2 cup
    Water 2-1/4 cup

Tips

I like to add fresh tomato wedges to the roasted veggies now and then. It is also good with fresh herbs in it.


Directions

Cut all the vegetables according to recipe. Add garlic and xvoo. Roast in oven for 20 minutes. While veggies are roasting, cook the quinoa. When quinoa and vegetables are done, mix together in a saute pan and season with sea salt and fresh ground black pepper to taste.
