three bell peppers (any color) - diced large
two tomatoes - diced large
herbs to taste (I like basil and tarragon)
Tips
keep in a large container in the fridge with 1/3 c. scoop in the container
serve on a 6" tortilla, add string cheese and turkey bacon for more protein
Directions
diced veggies and cook in a pan for a few minutes - no need for oil or spray, natural juices will steam
