Introduction

Ingredients

    SHRIMP & MARINADE:
    1 lb. uncooked large shrimp, peeled and deveined
    1 small garlic clove, minced (I use 1 T... we like garlic!)
    1/2 t. chili powder
    1/4 t. ground cumin
    1/4 t. salt
    2 t. olive oil

    CILANTRO VINAIGRETTE:
    1/3 c. olive oil
    1/3 c. fresh squeezed lime juice
    1/4 c. cilantro
    1-1/2 t. sugar
    1 small garlic clove, minced (yep... we use 1 T here too!)
    1/2 t. salt
    1/4 t. pepper

Tips

Lots of healthy MUFA and fiber!


Directions

Put ingredients for cilantro vinaigrette in the blender and blend until liquid. Pour into a small jar or container and refrigerate. Can be made earlier in the day

Combine salad greens and vegetables in 4 bowls. Slice avocado on top. Cook shrimp and spices in olive oil until the shrimp is pink/opaque (about 3-4 minutes each side). Top greens with shrimp and drizzle with dressing. Enjoy!
