Ingredients

    2 cups fresh mushrooms
    1/3 c thinly sliced onions
    24 spears of asparagus, cut in 1 inch pieces
    1/4 c eggbeaters
    2/3 c gluten free Bisquick
    1/4 shredded 6 cheese blend
    2/3 c 2 percent milk
    2 tablespoons canola oil for sauté

Directions

Sauté mushrooms and onions in 2 T oil. Add aspargus (cut in 1 inch pieces) and cook a bit longer. Put vegetables in bottom of 10 glass pie pan. The glass part is important. Top with cheese. Combine egg, bisquick, and milk, pour over top. Baker at 400 degrees until golden brown and set (maybe 45 minutes).
