Ingredients

1 Avocado
4 tbsp of Cilantro
8 Cherry Tomatoes
1/8 of a cup of Scallions
0.5 cup of Yellow/Orange/Red Bell Pepper
0.5 cup of Trader Joes Organic Quinoa
Juice from 1 lime
Tips
I also mix this with some spinach and create a salad instead of stuffed avocado.
Directions
1. Chopped tomatoes, scallions, bell pepper
2. Mix vegetables above with quinoa and cilantro in a bowl with the lime juice
3. Cut avocado in half. Remove pit. Save the skins. Chop fruit into little squares
4. Add avocado into mixture and fold together
5. Stuff avocado shells with mixture
