Ingredients

    1 TBsp Olive Oil
    2 Lbs boneless country-style pork ribs
    1 Onions, cut into half moons
    2 red/orange/or Yellow bell Peppers (bell peppers), diced
    6 cloves of Garlic
    1 28-oz Canned Tomatoes
    1/4 cup balsamic vinegar
    1/2 tsp red pepper flakes
    1/4 cup fresh basil or 1 TBsp dried
    1/2 tsp dried Marjoram
    Salt and Pepper to taste

Directions

heat olive oil in poan, brown meat well on both sides, set aside.

add onions, peppers and garlic - saute

add pork, tomatoes, vinegar, red pepper, basil, marjoram, and S&P. simmer for about 2 hours.

uncover and break meat into small pieces - simmer uncovered about 20 minutes.

add salt & peppers as needed.

Serve over mashed potatoes,

    Very good, my fiancee and I loved it. We used pork loin instead, and had it over whole wheat egg noodles. It's like a catchitori, however you spell it. - 1/25/09
