Ingredients

2cups dry quinoa
3 cups tomatoes chopped
1.5 cups onion chopped
1.5 cups cilantro chopped
lime juice from 3 limes
2 tbsp olive oil
2 tbsp Hemp oil
1 tbsp Macadamia oil
3 tbsp dry oregano
.5 tsp groud cumin
1 tsp ground chile de arbol (optional or cracked pepper flakes)
sea salt and pepper to taste
Tips
this is the basic recipie I use. Some times I will also toss microgreens or chopped spinach in it. and to make it a more complete meal I will add black beans to it as well.
Directions
cook quinoa in 4 cups of water along with some salt and the 3 tbsp of dry oregano
To make the dressing add the onion to the bowl first and squeese the limes onto the onion and toss then add the oils cumin salt and pepper and optional chile.
fluff up and cool quinoa. add the tomatoe cilantro and the onion dressing mix and toss.
Serving Size: makes about 10-12 one cup servings (calories calculated for 12 serv)
