Ingredients

    1-2 lbs Ground Beef (85% or leaner)
    1 c grated carrots
    1 c chopped onion
    1 lrg egg
    1/2 c breadcrumbs
    1/2 c milk (your choice-I use whole)
    16 tbsp ketchup (10 tbsp reserved)
    1/2 c brown sugar
    Salt and pepper to taste

Tips

I like to add chopped spinach, shredded zucchini and other "pureed" veggies for more bang to your buck and to get kids to eat veggies they done see.... We make a lot more than what we eat in one meal for leftover lunches throughout the week..... To save time in prep.. Use your food processor for veggies or to mix meatloaf with a paddle (if your processor comes with one).


Directions

mix all ingrediants except brown sugar and 10 tbsp ketchup. Crumple tin foil on bottom of cooking pan to hold meatloaf higher than fat drippings. Place loaf on foil "mound." Bake at 400 for 35-45 mins. Half way through baking, mix remaining ketchup and brown sugar to form sauce. Either pour over top of loaf and finish baking or sauce individual servings with a tbsp or two.
