Ingredients

    1 cup chopped onion
    1 Tbsp. butter, melted
    2 (14.5 oz) cans of vegetable broth
    1 (15 oz) can of pumpkin puree
    ½ tsp. of salt
    ¼ tsp. ground cinnamon
    1/8 tsp. ground ginger
    1/8 tsp. ground black pepper
    1 cup heavy whipping cream

Directions

1. Sauté onion in butter in a medium sauce pan until tender. Add 1 can vegetable broth; stir well. Bring to a boil; cover, reduce heat, and simmer for 15 minutes.
2. Puree broth mixture until smooth.
3. Add remaining can of broth, pumpkin, salt, cinnamon, ginger, and pepper. Stir well. Bring to a boil, reduce heat, and simmer 10 minutes, stirring occasionally.
4. Stir in whipping cream and heat through. Do not boil. Ladle into individual soup bowls. Enjoy!

    Very Good
    Very nice- my L.C. husband likes this! Used chicken broth b/c we were out of veg broth. We've also done half ck broth and half veg. I want to try substituting nonfat half and half for the cream for cholesterol concerns for myself. - 12/21/14

    O.K.
    As is, we didn't care for it at all. Didn't have much pumpkin flavor. I added more pumpkin (1/2 C & 1/3 C), an addt'l 1/4 tsp cinnamon, and 8 Tbsp brown sugar and then it tasted pretty good. - 11/19/09
