Number of Servings: 4

Ingredients

    8 chicken thighs
    1 onion
    5 tomatoes
    3 stalks of celery
    2 Jalapenos
    1 cup brown rice
    1tsp coriander
    1tsp cumin
    2 packets Sazon Goya with Azafran
    1 packet chicken bouillon (powder)
    3 cups of water

Tips

It's a bit spicy so if you don't like spicy use half a bell pepper or just one jalapeno.


Directions

Trim the fat on the chicken thighs and set aside. Coarse chop your vegetables. Sauté celery, peppers and onions in pan with 1 packet of Sazon. Add the chicken rice and chopped tomatoes when the sauteed veggies are slightly soft. Add the 2nd packets of Sazon, bouillon packet, coriander and cumin. 3.5 cups of water. Let cook for one hour in pressure cooker.
Serving Size: Makes 4- 2 cup servings
