Introduction
These cornmeal pancakes smell like popcorn while they are baking and have a delicious crunch. In order to make it healthier I put old fashion oats in a blender and used it instead of wheat flour. I use 1 cup oat flour. I make sour milk putting a cup of soy milk with a tablespoon of vinegar. These cornmeal pancakes smell like popcorn while they are baking and have a delicious crunch. Ingredients

In a heat resistant bowl place
Bob's Red Mill - Coarse Grind Cornmeal, 0.75 cup
Boiling Water, 1 cup (8 fl oz)
Blend in a blender
Old Fashioned Quaker Oatmeal enough to make 1 cup ground oat flour.
Mix
Organic soy milk, 1 cup
I tablespoon of vinegar
Combine all of the ingredients with
2 large eggs
Pinch of salt
Baking Powder, Aluminum Free, 2.5 tsp
Baking Soda, 0.25 tsp (remove)
1/4 stick of melted unsalted butter, unsalted
Directions
Grind the oats in a blender until flour forms, measure a cup to add to the recipe.
Boil the water and pour over coarse grind cornmeal until it thickens.
Mix the vinegar with the soy-milk to make sour soy milk.
Add the rest of the ingredients and blend well.
Pour batter on an oiled waffle griddle about 1/4 cup per waffle area.
Steam will come out as waffles cook. After a few minutes check if waffle is set. Remove and serve on a plate with your favorite toppings.
Serving Size: Makes 12 waffles
