Ingredients

16 oz Semi-soft Goat Cheese
4Tbl Extra Light Olive Oil
2 Tbl Fresh Rosemary
4 tsp Fresh Thyme
2 Tbl Pepper
1/4 c Bread Crumbs
8 Baguette slices
Salad & Salad Dressing
4c Lettuce or Arugula
1/4 c Walnuts, .05 cup, chopped
Option: 1/2 c Fresh blackberries
1 Tbl Walnut Oil
2 oz Dry Sherry Vinegar
Sea Salt to taste
Fresh Crushed Black Pepper to taste
Directions
1. Shape the goat cheese into eight 1-in.-thick disks and put in a container just big enough to hold them in one layer.
2. Sprinkle cheese with herbs and pour on olive oil. Cover and chill overnight.
3. Place in the freezer one hour before baking to firm them up.
4. Preheat oven to 400°.
5. Remove cheese from marinade and roll in bread crumbs.
6. Arrange on a large baking sheet and bake about 7 minutes until golden brown.
7. Turn them over and bake another 2-3 minutes.
8. Place a thin baguette slice on top for the last 5 minutes of baking.
Salad
1. Whisk together vinegar, salt, pepper, and walnut oil.
2. Tear the lettuce leaves into bite size pieces and place lettuces in a large bowl.
3. Drizzle dressing lightly over the salad greens and toss gently just to coat.
4. Divide salad greens among 4 plates and sprinkle with walnuts.
5. Place 2 of the baked goat cheese disks, 2 baguette slices on a plate with tossed salad greens.
