Ingredients

    250 g shrimp, thwed
    1/2 cup couscous (dry)
    1 medium Zucchini, chopped
    1 medium carrot, chopped
    1 medium tomato, chopped
    2 minced garlic cloves
    1 cup vegetable broth

Directions

In a skillet, add olive oil, shrimps and garlic, stir fry briefly over medium heat, add zucchinni, carrots and tomato.Simmer for about 3-5 minutes to cook through, add vegetable broth, take skillet of heat and add coucous. Let it sit for a few minutes untill coucous is done, fluff with a fork and enjoy!

    AWESOME!!! I did use brown rice instead of the couscous. And I cook the rice in the called for veggie broth instead of water. I will totally be making this again!!! TOTALLY - 5/18/11

    This was awesome! It was my first time making couscous, but I had purchased some about a month ago with the hopes of making something tasty with it and let's just say--it worked out. This was a very simple recipe that was very tasty and colorful. I will be making it again. - 7/4/09
