Ingredients

    2 zuccini squash
    1 yellow squash
    4 cloves of garlic, chopped
    1 onion or 1 cup
    1/2 c. chopped green pepper
    2 tbsp tomato paste
    1 cup of crushed or stewed tomotos
    (or 6 fresh tomatoes)
    basil in last minute of cooking
    salt and pepper
    vegatable broth added as needed during simmer

Tips

We serve this over brown rice with 2 over medium eggs on top with parmesean cheese. It's delicious and my (little) kids love it!


Directions

saute onion and green pepper in olive oil until onion is translucent, add garlic cook 1 minute, add squash, salt and pepper to taste. Saute until squash is tender, add tomato paste coat vegetables, add tomatoes and begin to simmer, stirring and adding broth to keep it from drying out. During last minute of cooking add basil to taste.
