Ingredients

1 lb chicken breast
1/4 c milk
1/4 c Dijon mustard
1/4 c breadcrumbs
1/4 c grated parmesan
1 T olive oil
1 clove garlic, minced
1/2 c onion, minced
2 c mushrooms, sliced
3/4 c uncooked brown rice
1 1/2 c chicken broth
Tips
For extra flavor let the chicken marinate in the Dijon mixture while you prepare the rice.
Directions
For Chicken:
Preheat oven to 375. Spray baking pan with non stick spray. Whisk milk and Dijon in a shallow dish. In another shallow dish mix together the breadcrumbs and parmesan. Dip each chicken breast in Dijon mixture and then roll in breadcrumb mixture. Bake 30 minutes or until cooked through.
For Rice:
Saute garlic in onion in oil over medium heat for 1 minute. Add the mushrooms and cook another 3-4 minutes. add rice and cook another 2-3 minutes stirring constantly. add broth and bring to a boil. lower heat, cover pan and simmer 20-30 minutes until rice is tender.
