Ingredients

6oz tri-color pasta
1/4c light mayo
1/8c vinegar (either cider or red wine)
1/2c sliced black olives (or 1 small can)
1/2c quartered cucumber
1/2c sliced cherry/grape tomatoes
Tips
Best to make the recipe the night before so that the flavors can soak into the pasta. Add more vinegar and mayo the next day, if needed. And only add tomatoes in when ready to serve, otherwise they get super mushy.
Directions
Cook pasta until al-dente. Drain and rinse with cold water. Add mayo, vinegar, cucumber, olives, and S&P to taste. Mix well, cover and refrigerate. Add tomatoes only when ready to serve.
