Introduction

Ingredients

Water 14oz
Split peas 1134 grams (2 bags)
Ham bone & pieces (We use leftovers. Cut previous sliced meat into 1/2 inch pieces)
Onion- 2 medium
Salt *optional 1/2 tsp
Pepper 1/2 tsp
Carrots 1 cup Diced
Celery 1 cup Diced
Potatoes raw 5 small diced
Make 24 1-cup servings
Directions
Heat water and split peas to boiling. Boil for 2 minutes than remove from the heat. Cover and let stand for one hour.
Stir in ham pieces (cut into 1/2 inch pieces) and bone with any remaining meat on it, onion, salt and pepper. Return to heat and bring to boiling. Reduce heat to simmer and cover for about 1 hour until peas are tender. Skim fat if necessary.
Remove ham and trim meat off of bone, be sure to remove as much fat as possible from meat before returning it to the soup. Add carrots, celery and dice raw potatoes in to the soup. Heat to boiling then reduce heat to simmer for 45 minutes.
