Ingredients

    white whole wheat flour (unbleached)
    honey 3 tbsp
    yeast .75 oz. or 2 pkg
    salt 2 tsp.
    extra virgin olive oil 2 tbsp
    water 2.5 cups

Tips

amount of water may vary, dough should be a bit sticky but still pull away from the sides of the mixing bowl while kneading. flour may also vary a little you may have to add a little to get the right consistency.


Directions

heat water to 120 degrees, combine in mixer with dough hook, 3 cups flour, honey, yeast, salt, olive oil, and water. mix 3 min. add remaining flour and knead with dough hook 8 min. put into bowl slightly oiled and let raise until double, about 45 min. punch down and form into 2 loaves, let raise again until double. Bake 23min.@ 380 degrees. turn out on baking rack and let cool. Cut into slices as needed.
