Ingredients

    1 cup Quinoa
    1 cup chopped carrots (2 carrots approx)
    1 cup copped onion (1 med)
    1 cup edemame
    2 cups Chicken stock/broth
    pinch of salt & pepper
    2 tbsp. Buttery spread
    1 tbsp. OO

Directions

heat skillet w/buttery spread and OO on medl. heat. Add onions, saute 5 mins. Add carrots, suate 2 mins. Add salt, pepper, stock and quinoa. Bring to boil. Add Edamame. Simmer for 15 - 20 mins or until all liquid is absorbed. Let stand for a few minutes off heat and then fluff.
