Ingredients

    4 tablespoons mayonnaise
    1 tablespoon grated fresh ginger
    2 teaspoons prepared horseradish
    2 teaspoons dark brown sugar
    4 teaspoons soy sauce
    2 garlic cloves, minced
    12 oz. flounder fillets
    ¼ cup panko breadcrumbs
    tomatoes, sliced or diced
    Chopped fresh parsley

Tips

I've improvised on this recipe in numerous ways. Sometimes I crumble feta cheese on top of the fish during the last few minutes of baking. I've also tossed in some broccoli and onions to cook alongside the fish. I tend to use a can of diced or crushed tomatoes under the fish. I use tomatoes rather than oil to keep fish from sticking to pan.


Directions

Combine first 6 ingredients in a bowl. Brush mayonnaise mixture on both sides of flounder fillets. Place fish on top of sliced or diced tomatoes in a single layer in a shallow baking pan. Sprinkle with breadcrumbs. Drizzle a little more of the mayonnaise mixture over the top of the breadcrumbs (or a little oil if you used it up).

Bake at 450° for 15 minutes or until fish flakes easily with a fork. Sprinkle with parsley.
