Ingredients

    Hard Boiled Egg, 6 large (remove)
    Olive Oil, 1 tbsp (remove)
    Onions, raw, .5 cup, chopped (remove)
    Red Ripe Tomatoes, 1 cup, chopped or sliced (remove)
    Turmeric, ground, 1 tsp (remove)
    *Coriander seed, 1 tbsp (remove)
    Pepper, red or cayenne, 1 tsp (remove)
    Salt, 1 tsp (remove)
    Yogurt, plain, low fat, .5 cup (8 fl oz) (remove)
    Water, tap, 1 cup (8 fl oz) (remove)

Directions

Heat oil in a pan and add cumin seed and let them pop. Add chopped onions and saute until golden. Add ground turmeric, coriander and cayenne. And saute for few seconds. Add chopped tomatoes can cook until soft. Add yogurt and cook until most of the water is evaporated. Add salt and water and bring it to a boil. Slide in boiled eggs( cut in half lengthwise). Simmer for 2minutes and garnish with cilantro.

Serving Size: 6- one egg and little sauce with it.
