Introduction

Number of Servings: 8

Ingredients

    1 large head of iceberg lettuce, shredded
    1 medium sweet red onion sliced thin
    1 large Florida avocado, peeled and chunked
    2 cups of fresh, ripe pineapple chunks
    salt and pepper to taste
    1/3 cup of extra virgen olive oil
    1/3 cup of white vinegar
    1/3 cup of sugar
    1/3 cup of fresh squeezed orange juice
    1 ounce or so of fresh lime juice

Directions

This odd but delicious salad has been a staple in my mom's Cuban-American kitchen since I was a child. Buy the freshest ingredients for the best flavor ! enjoy !


Mix the extra virgen olive oil, fresh squeezed orange juice, vinegar and sugar in a blender until it is smooth. Add the salt and pepper to the mixture(to taste). Toss the lettuce, red onion and pineapple, and avocado chunks together. Dress the salad with the olive oil mixture.

Lightly season again with a dash of salt, pepper and lime juice.

Serves 6 to 8
