    1 can black beans, rinsed and drained
    1 cup frozen corn thawed
    1 small red bell pepper diced
    1 small green bell pepper diced
    1 small orange bell pepper diced
    1 jalapeno, diced (seeded and de-veined for less heat)
    1 rib celery diced
    1/4 large red onion, diced
    2 cloves garlic minced
    2 tbsp olive oil
    3 tbsp lemon or lime juice
    3 tbsp red wine vinegar
    1/2 tsp salt
    1/2 tsp black pepper
    1/2 tsp ground cumin
    small bunch of cilantro, chopped


Best if let set overnight for the flavors to mix.


Just combine all ingredients in a large bowl and you're ready to eat.
However, this salad will taste even better if you let it chill for a couple of
hours. Tomorrow it will taste better yet!

Serving Size: makes 12 1/2 cup servings
