Introduction

I love these because they're easy, quick, healthy & even my guy loves them! I love these because they're easy, quick, healthy & even my guy loves them!
Number of Servings: 10

Ingredients

    3 boneless, skinless chicken breasts, cut into bite sized chunks
    1 package of fresh mushrooms (I like to use portobello)
    1 package of fresh grape tomatoes
    1 - 1/2 zucchini, cut into 3/4inch rounds
    1-2 red onions, quartered & separated (depends on how much you like onion - I just use for flavor)

    For the marinate -
    1/4C olive oil
    1/4C white wine (dry or a fizzy dry like presseco or something spanish or Portugese is good)
    1t minced garlic
    1t Italian seasoning
    S&P to taste
    Make this 2x bc one you soak the chicken in & one you use to brush on while cooking

Directions

Mix up one batch of maranade & place in a zip top bag. Then add your cut up chicken, seal the bag & place in the fridge for a minimum of 30 minutes & upto 24hrs.

Cut up your veggies, I like to put them into separate bowls for easy kabob assembly. Soak your skewers, if they're wooden for about 20mins before assembly.

Now assemble you're skewers as you like alternating all items.

When you're ready to grill them make up your 2nd batch of maranade & grab a pastry brush. Grill them for 10-20 minutes (until you are sure th chicken is cooked through). Brushing them with h maranade & rotating them through the grilling process.
