Ingredients

    Chicken Breast, no skin or bone, 1 breast
    *Cheese-shredded pepper jack 12 oz
    1 (14.5 ounce) can chicken broth
    2 (14.5 ounce) cans white or great Northern beans, undrained
    *Garlic, Trader Joe's frozen garlic cubes - 3 Cubes
    *Chopped Onion (1 Cup)
    *Tortilla Chips, Organic Tortilla Chips (1oz, 28g, ~14 chips), 3 gram(s)
    *Salsa Especial (medium-hot) - Trader Joes, 2-5 Tbsp OR (to taste)
    Salt and Pepper (to taste)Trader Joes Everyday seasoning (to taste)

Directions

Place chicken breast and entire can of broth into crockpot and onion & garlic cook on low for about 3 hours or untill chicken shreds apart. Add Salt & pepper to taste and remaining ingredients (make sure to crush the tortilla chips into small pieces), mix well. Cook for 40 minutes or untill cheese has complete melted. Serve hot with corn bread and steamed veggies.

Also good with 1 tsp of light sour cream drizzeled over the top.
