Ingredients

1 large sweet onion-small dice
2 large cucumbers, peeled and small diced
5 large tomatos, small diced
1 cup loosely packed fresh mint- minced finely
4 oz fresh squeezed lime juice
4 tbls(3oz) EVOO(extra virgin olive oil)
2 teas salt and 2 teas pepper
Directions
IN a large bowl mix onion through mint throughly. In a smaller bowl mix lime juice, oil, salt and pepper. Whisk until oil is no longer seperated from juice. Pout over veggies and toss to coat. YUMMY!
