Introduction

This recipe is not quite as healthy as its Chicken Street Taco Counterpart. However, it still can be implemented and enjoyed as an occasional treat. Crockpot cooking allows us to use cheaper cuts of meat; however; there is a cost! These meats are denser, and have a higher calorie and fat count. So be sure you choose wisely. For this recipe (photo) I used a 3 lb. Beef Round Roast and froze the additional servings for a fast dinner later. This recipe is not quite as healthy as its Chicken Street Taco Counterpart. Ingredients

    1 lb. Beef Round Steak or Roast.
    1 Can Green Chiles
    4 TBSP Chili Powder
    2 TBSP Oregano
    2 TBSP Ground Cumin
    5 Cloves Garlic minced
    1 Knorr Chicken Bouillon Cube
    12 Corn Tortillas

Tips

To turn up the feugo!... Add Chiptole peppers to taste. Beef holds its own with the Chiptole.

FRESCA tip, skip the cheese and sourcream. Opt instead for fresh Pico De Gallo, 2 oz. adds 10 Cal. or Try Texas Caviar for that Protein Packed punch.... 20 cal for 2 oz.


Directions

If there is any visible fat on your beef, trim it prior to cooking.

Cover bottom of crockpot with just enough water to cover. Add Green Chiles, Chili Powder, Oregano, Cumin, Bouillon, and Garlic. The meat will provide a rich broth during cooking. Add Beef to crockpot.

Cover, cook on low for 8 hours or high for 4 hours. Shredd meat half way thru cooking and press down so immersed in liquid.

Drain liquid from meat and defat. Me personally, I take a unique approach to this... Freeze a couple of spoons at beginning of cooking. Twirl frozen spoons through liquid and dispose of fat collected.

Add liquid back to meat, Divide into 4 portions. Spread each portion over 3 tortillas... and
