Introduction

Ingredients

    1 cup all-purpose flour
    1 cup oat bran
    3/4 cup whole wheat flour
    1 tbsp cinnamon
    1 tsp nutmeg
    2 tsp baking powder
    1 tsp baking soda
    2 eggs
    1 1/2 cups overripe mashed banana (3 small)
    1/2 cup dark brown sugar (can use as little as 1/8 cup depending on the sweetness of the bananas)
    1/4 cup canola oil
    1 1/2 tsp vanilla extract
    1 tsp Frontier All Natural Maple flavoring
    1/2 cup chopped pecans

Tips

I use real vanilla and real maple flavoring. You can leave these out or substitute other extracts and flavors to suit your taste.


Directions

In a large bowl, combine the first eight ingredients with a whisk. In another bowl, beat the eggs, sugars, banana, applesauce, oil and nuts. Stir into the dry ingredients just until moistened. Let sit for at least 10 so that the bran soaks in the moisture. Fill 12 greased or paper-lined muffin cups almost to the top rim or 24 standard muffin cups a scant two-thirds full. Bake at 375 degrees F for 15-18 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.
