Introduction

Ingredients

    12 oz Lean Ground Beef (or 1 lb if not using sausage)
    2 Johnsonville Chicken w/Cheese & Chipotle Links
    2 Eggs, beaten (or 1/2 cup Eggbeaters)
    2 Zucchini
    1/3 cup Flax Seed Meal
    ~1/2 tsp Seasoned Salt
    ~1/2 tsp Pepper
    ~1/2 tsp Onion Powder
    Non Stick Cooking Spray (like Pam)
    1/3 cup Salsa

Directions

Cut ends off the zucchini and discard. Slice into quarters lengthwise, then slice off and discard the 'peaks' (which has most of the seeds). Grate the zucchini, then place in a microwaveable bowl and microwave for ~2-4 minutes. It should be soft but not completely mushy. Drain off liquid. Fold up several paper towels and press into zucchini until all remaining liquid is absorbed. (Repeat with more paper towels if needed.) Grate the 2 sausage links. Combine all ingredients and mix well. Spray a small casserole or baking dish with non stick spray, then place meatloaf mixture evenly in pan. Bake, covered, at 400 degrees for 45 minutes. Spread salsa on top and bake, uncovered, 10 to 15 additional minutes.
