Ingredients

    Egg, fresh, 4 large (remove)
    Egg substitute, liquid (Egg Beaters), .5 cup (remove)
    Cheddar Cheese, 1.25 cup, shredded (remove)
    Half and Half Cream, .5 cup (remove)
    Milk, 1%, .5 cup (remove)
    Heavy Whipping Cream, .2 cup, whipped (remove)
    Onions, raw, .5 large (remove)
    Asparagus, fresh, 10 spear, medium (5-1/4" to 7" long) (remove)
    Olive Oil, 1 tbsp (remove)

    (would add more 1-2 more eggs and whites next time, only made 11 muffins

Tips

can put any vegetable inside, probably don't need heavy whipping cream. I actually used 3 kinds of cheese. You can put almost anything inside.


Directions

Saute onions, asparagus in olive oil. Mix rest of ingredients together in bowl. Add in sauteed veggies. Spoon into greased muffin pan, bake at 375 for 30 minutes.

Serving Size: should make 12 "muffins"
