Introduction

Ingredients

    1- box of Uncle Ben's Chicken & Wild Rice
    1 - can Diced Tomatoes no salt Del Monte
    1 - medium red bell pepper chopped
    1 - large yellow bell pepper chopped
    1 - medium sweet yellow onion
    1 - cup shredded cabbage
    3 - fresh baby portabella mushrooms chopped
    season to taste

Tips

This was the first time I made this and next time I will drain some of the liquid from the tomatoes. I found it to be to wet for my taste.


Directions

Cook rice according to the instructions;
saute mushrooms, peppers, & onions;
boil cabbage until soft, then drain;
add cabbage and diced tomatoes to mushroom mixture;
combine with rice; mix well and serve.
