Ingredients

    1 egg, beaten well
    1/2 tsp. vanilla extract (or almond extract)
    1 Tbs. heavy cream
    2 Tbs. cocoa powder
    2 Tbs. Erythritol
    1/2 tsp. baking powder
    1 tsp olive oil

Directions

Beat egg well and then mix in all other ingredients.
Spray the inside of a large straight-sided coffee cup with Pam & pour in batter.
Microwave for 40-70 seconds.
The shorter amount of time will create a cake with a chocolate "sauce".

Immediately unmold the cake onto a plate, so it doesn't continue cooking in the hot mug. Let it cool, or enjoy it warm!

    This was terribly bitter. had to use twice as much erythrinol as called for and now our stomachs are upset. - 6/25/15
