Light, high protein, on-the-go breakfast! Light, high protein, on-the-go breakfast!
Number of Servings: 18

Ingredients

    10 egg whites
    2 cups mushrooms, cooked down to 1 cup, with 1 tbsp dry Sherry
    1/2 cup Jimmy dean precooked Turkey Sausage Crumbles
    1/4 c. 2% shredded cheddar cheese
    1/2 cup fat free cottage cheese

Tips

Cooking times will vary depending on pan and temp of eggs--pull them out when they're golden brown!


Directions

preheat oven to 350
cook mushrooms in sherry and canola spray
grease a muffin pan very well
beat egg whites and cottage cheese together, then portion into muffin pans
Evenly disperse sausage crumbles and mushrooms into each muffin cup
top each with a very small sprinkle of cheese
Bake until golden brown
allow to cool, then store wrapped in fridge and pop in microwave to heat for a quick breakfast!
