Introduction

These (almost) raw bars are my version of a Larabar. They are great when you're craving something sweet. They are actually REALLY sweet, and contain no sugar. Just dates and other natural things. These (almost) raw bars are my version of a Larabar. They are great when you're craving something sweet. They are actually REALLY sweet, and contain no sugar. Just dates and other natural things.
Number of Servings: 32

Ingredients

    1 c raw almonds
    .5 raw cashews
    1.5 c pitted dates
    1 c shredded, unsweetened coconut
    1 c quick oats
    juice of one lemon
    zest of one lemon
    small piece of ginger root

Directions

Combine everything in food processor. Add water slowly if needed to process. Line a baking dish with parchment paper and press into bottom, or form into 32 balls and refrigerate 2 hours. Cut into bars, if needed.

Serving Size: Roll into 32 balls, or press into bars
