Ingredients

    Yellow bell peppers (2)-whole
    jalepeno peppers (2)-diced
    habenero peppers (1)-diced
    corn on the cobb(2 ears)-roasted and cut off cobb
    Brown rice(1 cup)
    black beans (1 can)
    avocado(0.25)-diced
    tomatos(2)-diced
    lettuce(3 leaves)-shredded
    chalula hot sauce
    montreal steak seasoning
    red onion (0.25)-diced

Tips

This is a low fat, vegan recipe. It's easy to make and you'll have a lot of leftovers for salads and wraps. If too hot, add mango or more corn to lessen the spice.


Directions

Cook the rice and mix in black beans. Saute the onions and hot peppers along with the hot sauce and seasoning. Don't over cook the peppers, just enough to soften them. Add the rice and black bean mixture to the peppers. Cut the top off the yellow bell peppers and hollow out. Lightly coat the inside of the bell peppers with hot sauce and roast on the grill until inside is softened. Fill the bell peppers with the rice and bean mixture and put on plate. Top with avocado and roasted corn. Make a side salad from lettuce, tomato, remaining avocado and roasted corn.
