Introduction

This spaghetti combines the sweet and smoky flavors of fire roasted red peppers and tomatoes with nutty whole wheat pasta and spicy red pepper flake! Also great when served cold between two slice of toasted bread that has been rubbed with fresh garlic! Ingredients

    1 tsp extra virgin olive oil
    1/2 small red onion
    1 clove garlic, minced
    1/4 cup roasted red pepper, about 2 or 3 halves, chopped
    1/2 cup fire roasted canned tomatoes
    1/4 tsp oregano, 1/2 tsp if using fresh
    1/8 tsp red pepper flake
    1 cup whole wheat spaghetti
    2 tbsp parm cheese, grated

Tips

If you have the time, cooking the sauce for up to 1hr really allows for the flavors to develop.


Directions

Heat olive oil in a pan over medium. Cook onion and garlic until tender, about 8 min. Add tomatoes, salt, pepper, oregano, and pepper flakes. Reduce heat to low and simmer 10 min. While sauce simmers bring water to a boil and cook spaghetti until aldente, about 6-8 min. Drain and add pasta to skillet of sauce, toss to coat and cook an additional 2 min. Divide between two plates, sprinkle with parm and serve.

Serving Size: Makes 2 servings, about 1 cup each
