Introduction

I grow cilantro, parsley, chives and other herbs in the summer and am always looking for ways to use it all! This is one of my favs, and many friends have complimented me on this dish. Ingredients

    2 Cups frozen corn kernals (thawed)
    1/2 Diced red onion
    1/2 Cup Wishbone Red Wine Vinaigrette
    1/2 Cup fresh chopped cilantro (leaves and stems)
    1/4 Cup fresh chopped parsley
    1/4 Cup fresh chopped chives


Tips

Yummy when served with tortilla chips, but also great spooned over grilled chicken, salmon, pork chops to add extra zing to the meat.


Directions

Mix all ingredients together, cover and chill for a couple hours before serving. Makes 6 half cup servings.
