Ingredients

    2 cups all purpose flour
    2 1/4 cups cake flour
    2 tsp baking powder
    1/2 tsp kosher salt
    16 ounces plugra butter, room temperature
    1 cup sugar
    1 cup brown sugar
    8 large eggs, room temperature
    1 tablespoon Vanilla Bean Paste

Tips

Make sure to beat the sugar and butter at least 5 minutes - it needs to be very light and fluffy. This cake gets its leavening from the eggs so be sure to beat the eggs 1-2 minutes after each addition - it really does make a difference. Don't over mix the flour!


Directions

Beat the butter and sugars at high speed until very light and fluffy (at least 5 minutes). Add eggs one at a time, and beat in each egg 1-2 minutes. Scrape down the sides of the bowl often. Add the vanilla bean paste. Add in the flour,baking powder and salt, mixing on low speed and do not over mix. You may want to fold in the last of the flour to make sure of this. Scrape the batter into a buttered loaf pans and smooth the top. Bake at 325 degrees for 45 minutes - check to make sure the top is not getting too browned - if it is, cover it loosely with a foil tent. Bake another 45 minutes - the cakes are done when a thin knife inserted deep into the center comes out clean.
