Ingredients

    1 lg onion
    1.5 tbls olive oil
    3 tsp crushed garlic
    1 cup raw carrot, chopped
    3.25 cup raw zuchini, chopped
    6 cup cabbage
    32 oz low sodium vegetable broth
    2 cup cooked kidney beans
    1/4 tsp celtic sea salt
    2 cup francesco rinaldi no added salt pasta sauce
    1 cup corn kernels
    1.75 cup cooked chick peas
    3 tsp basil
    1 tsp italian herb seasoning
    1 tsp mrs dash table blendc

Tips

This recipe is low sodium - you may have to increase the salt to taste.


Directions

Saute onion, garlic, carrots and zuchini in olive oil. Add cabbage and saute another 5 min. Add veggie broth, pasta sauce, italian herb seasoning, mrs. dash and salt. Simmer for 15 min. Add beans and corn. Cook another 15 min. Add basil, mix well and serve.
