Introduction
After reading many recipes on crustless quiches I came up with my own family friendly version. Feel free to add more veggies to bulk it up more! Ingredients
-
5 Slices Turkey Bacon
1/2 Onion
1/2 Red Pepper
1 Cup Baby Spinach
1/2 Cup Flour
1 1/3 Cups of Skim Milk
2 Eggs
1/2 Cup of Egg Beaters
1/2 Tsp Baking Soda
Salt to taste
2 Wedges Laughing Cow Lite Swiss Cheese, Spreadable
1 Tbsp Extra Virgin Olive Oil
Directions
-Preheat to 400 Degrees
-Saute onion and red peppers together in EVOO
-Add spinach just at the end to soften
-Set aside
-Cook bacon
-Whisk eggs, egg beaters, flour, baking soda and salt
-Add in veggies and bacon
-Pour into pan (we use an 8x8 sized pan but you could use a pie pan or put into a muffin tin to make easier to freeze)
-Top with pieces of the cheese
-Cook for 25min or until set and golden edges
-Serve alone or with other breakfast favorites!
