Ingredients

    2 large eggs beaten
    2 tsp sugar, use your favorite, but don't use synthetic sweetener, it will ruin the flavor
    1/2 tsp salt
    enough oil to coat pan, about 3/4 tsp

Tips

It is best to use a small frying pan, 8 inches or less, or if available, a square tamagoyaki pan works the best to get the shape.


Directions

oil your pan and let it get hot. mix egg, salt and sugar. Add enough egg mixture to thinly coat the bottom of your small frying pan. once egg has set about halfway, push it all to one side of your pan and add a bit more of egg mixture, being sure to get some under the precooked part. Once it has set about halfway, use chopsticks or a fork to roll egg onto instelf, then slide back. repeat until all egg mixture has been used up. Once set remove from pan and wrap in cling wrap to shape it while it cools. Cut into bite sized pieces and pack into a bento, or use on iritamago sushi.
