Number of Servings: 4


    2 boneless skinless chicken breasts, cut into small cubes
    1 cup water chestnut slices, cut in half
    1 cup bamboo shoots, cut in half
    1 onion, chopped
    1 teaspoon minced garlic
    1 head butter (Boston) lettuce

    Stir Fry Sauce
    1/4 cup soy sauce
    1/4 cup Splenda brown sugar
    1 teaspoon rice wine vinegar
    6 shakes ground ginger


Prepare the stir fry sauce by mixing all together in a small bowl.
Spray Pam on a wok or large frying pan & heat on high heat.
Sauté onion, then add chicken breasts.
Add water chestnuts, bamboo shoots & garlic.
Add the stir fry sauce to the pan and sauté the mixture for a couple minutes then serve it in the lettuce"cups" (each leaf).

Serving Size: 3 lettuce cups

    Was a little watery and had to cook it down more than a couple minutes, but still very tasty. I used agave nectar instead of stevia. - 1/27/17
