Ingredients

    1 Onion
    2 cloves garlic
    500g pack of lean mince beef
    Veg - mushrooms, peppers, celergy, whatever you have in
    8 Carrots
    2 tins of tomatoes
    1 small tin of tomato puree
    beef stock cube
    mixed herbs
    Maybe a dash of wocerstershire sauce!

Tips

I usually find this does our whole family - my portion, hubby eating twice as much as me and two smallish kids - for two, sometimes even three meals.


Directions

Fry mince beef with onion and garlic (ideally in something like fry lite). Add lots of chopped vegetables - depends on what you have in, I use mushrooms, peppers, celery, carrots etc.. I usually whizz these up in the food processor with the tins of tomatoes, so that there are no 'bits' - other than the carrots which for some reason my kids like. Once that's had a bit of time to cook, add tomato puree, stock cube, herbs etc. and cook for a while.
