24 Tablespoons Hershey's unsweetened Baking Cocoa
1 can (14 oz) fat free sweetened condensed milk
8 Tablespoons SmartBalance butter substitute
1/2 cup finely chopped pecans
3 sheets of Phyllos dough
Outer dough layer will be very crumbly, flaky. Can use waxed paper if have problem with dough sticking or tearing when trying to roll it into a log especially in high humidity. Watch closely as baking times can vary with different ovens and altitudes. There is alot of room for experimenting with the chocolate filling and/or dough. Example, Can substitute evaporated milk and sugar (or Splenda if diabetic) for the condensed milk, use different nuts, make into one large flat pastry to be cut into squares or use muffin tins to make individual little tarts. I sometimes make little tarts this way and top it with a cherry pie filling and/or fat free whipping cream.
Melt 8 Tablespoons of SmartBalance in medium pan, add condensed milk and cocoa and stir until well blended. Spread evenly on top of dough in the center leaving half to one inch free along sides. Sprinkle with pecans.
Roll into log and fold the two ends under pressing together with fingers. If needed can brush or spray ends to make a better seal.
Bake in preheated 450 F oven on lightly sprayed non-stick baking sheet until golden brown, approx. 20 to 30 minutes. Remove from baking sheet and allow to cool
on a sheet of waxed paper.
Cut off folded dough ends and discard. Thinly slice 16 or more swirls. Store in air-tight container such as tupperware lined in waxed paper with waxed paper between each layer until ready to serve.
