Ingredients

    1 box (13.25 oz) whole wheat penne pasta
    3 T canola oil
    1 whole onion, cut into thin half-ring slices
    3 cloves garlic, minced
    1 each, red, yellow & green bell pepper cut into slices
    1 lb. beef sausage links, sliced
    salt, pepper & crushed red pepper to taste
    (optional) fresh grated parmesan cheese

Tips

Fresh parmesan cheese is much more flavorful than the canned versions.


Directions

1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes.

2. While pasta is cooking, heat the oil in a large 12" skillet. Add the onion, garlic, and bell peppers into the skillet and saute for 10 minutes or until tender. Add sausage slices and cook until warmed through.

3. Drain pasta when done cooking, reserving a few tablespoons of liquid. Add pasta and small amount of liquid into the skillet with meat and vegetables. Stir until ingredients are mixed and pasta is coated. Add salt and pepper to taste. Include crushed red pepper for a spicier version.

4. Serve hot, with fresh grated parmesan cheese sprinkled on top if desired.
