Ingredients

    1 large eggplant, cubed
    1 large white onion, chopped
    2-26oz cans of Hunt's Pasta Sauce Garlic & Herb

Directions

Mix all ingredients in a deep baking pan and bake uncovered for 60 minutes. Stir halfway through.
